Melon Berry Medley

I’m sure most of us didn’t follow our strict diet yesterday (or at least I didn’t), but today is a new day and it’s time to get back on track. The 4th of July left-overs can be very tempting so opt for a lighter second helping. Grab left-overs of hamburger and make it low-carb by replacing the bun with lettuce or have seconds on the fruit salad instead of the pasta salad.

In case you didn’t have fruit salad yesterday or there is no left-overs, here’s a great summer melon berry medley, but remember…there are no real rules when it comes to making fruit salads. Just use the freshest fruit you can get.

Prep Time: 10 minutes
Cooking Time: 0 minutes
Servings: 4 - 6

Ingredients:
- 1/2 cut cantaloupe
- 1/2 dry pint of fresh raspberries
- 1/2 dry pint of fresh blueberries
- 1 tbsp honey
- 1/4 cup orange juice

Instructions:
Cut chunks of melon from the cantaloupe half, or use a melon baller if you have one. In a large bowl, combine melon balls or chunks, raspberries and blueberries. Combine orange juice and honey and drizzle over fruit.

Chill until ready to serve.
